Saverne Baked Brie


  • 1 8oz wheel of brie
  • 1 sheet puff pastry, thawed
  • ¼ cup Saverne Classic Sauerkraut brine removed
  • 1 TBS Saverne Classic Sauerkraut brine
  • 1 TBS olive tapenade
  • 1 egg


  • Preheat oven to 400 degrees
  • Place parchment paper on baking sheet
  • In a small bowl, mix egg with sauerkraut brine and set aside
  • Using a cutting board, cut the brie in half so you have two rounds.
  • Place creamy side up on cutting board
  • On one half, sprinkle with sauerkraut and olive tapenade, top with other half brie, creamy side down towards sauerkraut
  • Place unfolded puff pastry sheet on parchment lined baking sheet and place stuffed brie in middle of puff pastry
  • Brush puff pastry with egg wash and bring one corner of the pastry up and over the brie, push lightly to secure.  Continue to wrap and press lightly until brie is covered and all puff pastry is folded.  Flip and place seam side down on baking sheet
  • Brush with egg wash and bake for 20-30 until puff pastry is brown
  • Remove from oven and let stand 8-10 minutes, serve with crostini or crackers.
